For British student Izy Hossack (@topwithcinnamon), pancakes are just as good for lunch or supper, let alone breakfast. Growing up in the UK, Izy’s American mother influenced a taste for the fluffier, smaller US-style pancake, and Izy would often lug home boxes of American pancake mix from the States when she went for visits. When she started a food blog, Izy found a way to make the pancakes without a mix, and now shares her recipes on Instagram. “British pancakes are crepes — they are thin and you have them with a filling and roll them up,” she says. “But American pancakes have a raising agent and flour, so it’s a thicker batter, and you make them a bit smaller so they are more like a cake.”
On Pancake Day — also known as Shrove Tuesday, the day before the first day of Lent — Izy’s mum makes traditional British savory crepes, followed by sweet crepes with maple syrup or chocolate chips. But Izy still enjoys American pancakes on other days, especially for supper. Her favorite is a recipe with pumpkin and cinnamon. “I have them with cream cheese, toasted coconut and pecans,” she says. “I like how customizable they are, and really easy to make. If you are craving a dessert, but don’t want a whole cake, you can just make a few pancakes and eat them at any time of day!”
